This presentation at the 2011 Centennial Convention in New Orleans was a lab consisting of hands-on water comparative in which the attendees had the opportunity to create different water chemistries and evaluate their effects on the overall flavor of the brewed beverage. Participants discussed the value of a water quality standard for the repeatability of flavor profiles through the entire chain of custody.
